“Someday in the hopefully not-too-distant future, when we’re able to travel again, maybe we’ll make it all the way to Santa Cruz Lodge, chef Jose Duarte’s 12-room eco-hotel in the foothills of Peru’s Huascaran National Park; the wellness- and gastronomy-focused getaway strives to make a positive social impact on the area’s agricultural communities. In the meanwhile, we can still get a taste of Duarte’s Peruvian cuisine at Tambo 22, the restaurant he opened in March in Chelsea. You’ll find “ceviche”-style Andean lupini beans with vegetarian leche de tigre; slow-cooked pulled chicken in a creamy, Peruvian pepper sauce; and even a burger of short rib and alpaca meat, topped with gouda cheese and minty-spicy huacatay sauce.”
